Spicy XO Stir-Fried Clams

These spicy stir-fried clams are cooked with garlic, cooking wine and a rich XO sauce that brings out the natural sweetness of the clams.

Finished with Sim Sim Food Studio Master XO Sauce, this dish delivers a deep umami flavour with a gentle kick of heat, making it perfect for sharing or serving alongside rice.

Ingredients

  • Raw clams
  • Cooking wine (white wine, sake or cooking wine)
  • Minced garlic
  • Fresh coriander (chopped)
  • Sim Sim Food Studio Master XO Sauce
  • Corn flour or starch
  • Salt and pepper (optional)
  • Cooking oil

How to Make Spicy XO Stir-fried Clams

1. Cook the clams: Thaw the clams if needed. Boil in water with a splash of cooking wine until the shells open.

2. Sauté the garlic: Heat a pan with a little oil and cook the garlic until fragrant.

3. Stir-fry the clams: Add the clams to the pan and toss together with the garlic. Add another splash of cooking wine for extra flavour. Stir in a generous spoonful of XO sauce and mix well.

4. Thicken the sauce: Add a starch slurry and stir until the sauce thickens and coats the clams evenly.

5. Finish and serve: Stir in fresh coriander and serve hot. Add an extra spoonful of XO sauce on top if desired.
