How to Make Spicy Shrimp Cucumber Salad
1. Prepare the shrimp: Boil the shrimp until pink and cooked through. Drain and allow to cool slightly. Roughly chop the cooked shrimp into smaller pieces.
2. Prepare the cucumber: Slice the cucumber in half lengthwise and scoop out the seeds to create a hollow centre.
3. Make the filling: In a bowl, combine the shrimp, mayonnaise, chopped coriander and a spoonful of Chilli Oil. Stir until the shrimp is evenly coated in the creamy spicy dressing.
4. Assemble: Spoon the shrimp mixture into the cucumber halves. Drizzle with extra chilli oil and sprinkle with sesame seeds and black pepper before serving.
